The Senda stepy by step

The pig in the pasture. For about 50 min, we walk through the pasture of the Natural Park and Biosphere Reserve, Sierra de Aracena and Picos de Aroche in Huelva and talk about the genetic characteristics and behavior of purebred Iberian pigs in their environment. We will explain the "montanera", the "arrobas" and how the Denomination of Origin JABUGO makes the traceability in the field to understand where and how the Iberian pig is raised in freedom.

The elaboration of our Iberian hams. We will visit our drying room for about 45 min. You will learn about the salting process of the hams and the manual seasoning of the sausages, the natural curing process that we practice and the differences with other more industrial methods.

It will be a visit to our cellars enjoying the aromas that the product releases while it cures.

The tasting. We will enjoy two types of ham: 50% Iberian bait ham, 100% Iberian acorn ham D. O. Jabugo. It will be cut to knife at the time and accompanied with wines D. O. Condado de Huelva of Bodegas Diaz: Fruity, Vado del Quema, Dry or generous, fine type.

We will finish the tasting with 100% Iberian acorn-fed pork loin and Iberian acorn-fed pork tenderloin paired with sweet orange wine.

In the case of children under 18 years old, they will be offered soft drinks or juice.

In the case of children under 12 years of age, the amount of the two types of ham to be tasted will be less than that of adults.
